Hope you all come again!*

I love me some Pioneer Woman. If you are not familiar with her very popular Blog The Pioneer Women, please go read her archives now, you will die of laughter.  Not only is she funny, she also has the most amazing down home cooking recipes, ever!  And luckily for me I made her Cinnamon Rolls the other day.  8 whole pans of lovely cinnamony perfection.   I actually froze the other 7 pans.  But PW being a kind generous person usually gives her rolls away to neighbors, friends and family, and I might just do that the next time I make them.  Because there will be a next time, I am sure of this.

Pioneer Woman besides having the best blog ever, recently released a best-selling cook book.  And because I am a #1 fan I bought a couple.  Yes a couple of them.  1 for myself of course, and I thought one for maybe Christmas gifts, or better yet a blog giveaway!!!  Yes I am willing to share.

Lets Meet the Newlyweds Neil and Ashley.  Ashley has a really cute blog Daily Dose of Ash in which she writes about her new married life in England. Including the hardships in trying to find the ingredients to cook a traditional American Thanksgiving dinner.  She also has these great Cocktail Thursday posts, in which she shares fabulous pictures and recipes of some awesome drinks,  I am really wanting a Strawberry Watermelon Mojito right now!!  Please be sure to check it out.  Now on to the interview!!

How did you meet?

A friend of mine moved into a new, shared house and I went to visit her and meet her new housemates, one of whom was Neil. We were both living in Canada, I was going to school there and Neil was there on a one-year work permit. We hit it off immediately and quickly became inseparable. When Neil had to return to England at the end of his work permit, we dated long-distance for another two years until our wedding.

When did you know he was the one?

In way, I have always felt that he was the one, but I would say that it was when he left Canada to return to England. We had only been dating for about three months at that point, but in the days leading up to his flight I found myself breaking down in tears whenever I thought about it. I couldn’t picture my life without him and I knew that he was the only one for me.

What is one of your favorite things to do together?

Since we are living in England, we like going out and exploring new (to me) towns and villages together. We also love photography so we always bring our camera with us on our adventures and I post my favorite snaps on my blog.

What is something new you learned about your husband after you were married?

That he’s just as excited as I am about all our new experiences and firsts together. We just bought a new television and entertainment cabinet which happened to arrive on our three-month wedding anniversary so we decided to play it up, calling it a gift and celebrating with a homemade lasagna, nice bottle of wine and little cards for each other – which we didn’t even discuss exchanging beforehand!

What do you do to stay connected during everyday stresses of life?

We send text messages to each other throughout the day and chat during our lunch breaks. In the evenings we always have dinner together, which we cook and clean up together, then we usually relax and watch tv or sneak out for a tipple at the local pub.

What is your best piece of marriage advice?

We’ve only been married a few months, but I think that making sure that you treat each other as equals and understand that you will have differences and disagreements is important. If you respect each other and keep your marriage as your top priority, your love will see you through any little problems that might come up.

What is your favorite quirk about your husband?

He loves being in bed! He would lay there all day if he could and regularly states how much he loves bed. He’ll read, watch television or even play his guitar while tucked up. I don’t know if I love it so much when I want to go out and do things, but I can’t help but smile when I see him all curled up, snug as a bug in rug with a big grin on his face as he lounges and lazes.

What is something special you do just for your husband?

He’d kill me for this, but I give him manicures and pedicures! No nail polish or anything girly like that, he’s definitely a man’s man, but I clip the nails, buff and file. I also give him head rubs and try to surprise him with little gifts.

Tell us something about yourself.

I am an expat newlywed just trying to figure out life in the UK. I am enjoying all the adventures and new experiences that come along. I have recently started a new job with a local jewelery company and my husband and I are saving for our first house.

 

Food Network Challenge – Refried Black beans and Tomatillo Sauce November 11, 2009

This weeks Food Network Chef’s Challenge hosted by I Blame My Mother is Daisy Martinez.  Daisy has a showed called Viva Daisy, I have yet to see the show but from her recipes I can tell I will love it.  She has a latin style of cooking that I just love.  So because of that I choose her Re-fried Black beans and Tomatillo salsa.  I choose these because one of my very favorite restaurants The Gristmill serves a dish called Tomatillo chicken.  The Gristmill is located in a tiny town called Gruene, Texas (pronounced Green).  Gruene  is also home of Gruene Hall which is the oldest dance hall in Texas, and a great place to visit if your ever in the Texas Hill Country.

But anyways.  I’ve always wanted to recreate this dish, which is basically a layer of refried beans, grilled chicken and then topped with tomatillo sauce.  So when I saw Daisy had a recipe for both the beans and salsa, I knew it was time.

Verdict: The beans were excellent, very easy to cook, and the smoky flavor from ham was delicious!  The tomatillo sauce was also just great.  I could have used a little more heat and added more peppers, but this made a mild salsa, which I like also.

Ingredients for Re-fried Beans: 1 tablespoon olive oil, 1 small Spanish onion, cut into medium dice, 2 cloves garlic, whacked with the side of a knife and peeled, 1 pound dried black bean, 1 smoked ham hock or smoked turkey wing (I used Ham Pieces), 1 bunch cilantro, washed, 2 bay leaves, Salt and freshly ground black pepper, 2 jalapenos (optional), 2 banana peppers (optional)

For starters rinse your black beans really well in a colander.

Then in a large stock pot pour in a couple tablespoons of olive oil, turn on medium heat

and go ahead and prepare your aromatics, like garlic, smash with a knife

pop out of the shells and dice, no need for a super fine dice

Then dice your onion

add both of your onions and garlic to the pot

and cook for about 3-4 minutes until softened

Then add your beans and ham pieces

add the roughly chopped cilantro

and cover with water about 2 inches, I think I used about 7 cups

toss in a few bay leaves

and if you like me and using any excuse to use your garden peppers, go ahead and add a few now

I used 2 jalapenos and 2 banana peppers

I also added about 2 tsp of kosher salt

bring to a boil

and then lower to a simmering boil, stirring ocassionally

and keeping and eye on if you need to add a little more water or not, I did add about 2 more cups

Once the water has reduced and the beans are thoroughly cooked, remove the bay leaves, and ham pieces

The recipes calls for using a food processor to mash the beans, but I used my handy immersion blender

Next up Tomatillo Salsa Ingredients: 1 pound fresh tomatillos, 1 large Spanish onion (about 12 ounces), cut into large chunks (about 3 cups), 3 cloves garlic, 1/2 packed cup coarsely chopped cilantro leaves, 1/2 jalapeno (seeds and all if you like heat), 1 banana pepper, 1/2 lime, juiced, Kosher or fine sea salt

To start prepare your tomatillos by removing the outer husk, and rinsing them well with water

Then dice into quarters

and add to the food processor or blender

go ahead and add your garlic cloves

Then rough chop the onion and add to the food processor

and process until smooth

Then add in the peppers

and roughly chopped cilantro

and juice from the lime, I used a lemon because it’s what I had

Then process until smooth and no chunks

Pour into a medium sauce pan and add some kosher salt

cook over high heat, until boiling

and all the water has cooked out

Then pan cook or grill a chicken breast however you like.  I just marinated them in Italian dressing, and then cooked in a skillet for about 3-4 minutes each side.

The best part about this dish is the plating.

First you put a healthy serving of the re-fried beans down

Then on top of them the chicken breast

and on top of that the tomatillo sauce

and be sure to get a little of all three with each bite

I just couldn’t wait to dig in.

New Style Refried Beans (Frijoles Refritos Estilo Nuevo)

Ingredients

1 tablespoon olive oil

1 small Spanish onion, cut into medium dice

2 cloves garlic, whacked with the side of a knife and peeled

1 pound dried black beans

1 smoked ham hock or smoked turkey wing

1 bunch cilantro, washed

2 bay leaves

Salt and freshly ground black pepper

Good quality tortilla chips, for serving

Thinly sliced red radishes, for serving, optional

Directions

Heat the olive oil over medium-high heat in a medium saucepan. Add the onion and garlic and cook, stirring occasionally, until soft but not browned, about 4 minutes. Add the beans, ham hock, and cilantro. Pour in enough water to cover the ingredients by 2 inches. Toss in the bay leaves and bring the water to a boil, then adjust the heat so it is boiling gently. Cook the beans until tender, about 2 hours. Keep an eye on the beans; they should always be covered by liquid. When the liquid meets the level of the beans, top it off with cold water. Toward the end of cooking, ease up on the liquid you add; the goal is to have the beans barely covered with liquid by the time they’re tender.

Drain the beans, reserving the liquid. Discard the turkey wing or ham hock and the bay leaves. (Leave the cilantro in with the beans.) Put the bean mixture in a food processor and process, gradually adding enough of the reserved liquid, until the beans are the consistency of mashed potatoes. Season, to taste, with salt and pepper. Mound the beans on a platter and garnish with tortilla chips and radish slices, if using. (The beans can be prepared up to 30 minutes in advance. Return the beans to the saucepan and keep warm over very low heat.)

Tomatillo Salsa

Ingredients

1 pound fresh tomatillos

1 large Spanish onion (about 12 ounces), cut into large chunks (about 3 cups)

3 cloves garlic

1/2 packed cup coarsely chopped cilantro leaves

1/2 jalapeno (seeds and all if you like heat)

1/2 lime, juiced

Kosher or fine sea salt

Directions

Pull the husks from the tomatillos and wash them under cool water until they no longer feel sticky. Cut them into quarters and put them into the work bowl of a food processor. Add the onion and garlic and process until smooth. Add the cilantro, jalapeno and lime juice and process until the jalapeno is finely chopped.

Scrape the mixture into a small saucepan. Season lightly with salt and bring to a boil over medium heat. Cook, stirring occasionally, until most of the liquid is boiled off and the salsa looks relish-y, about 15 minutes. Cool before using. The sauce can be refrigerated for up to 1 week. If refrigerated, you may want to add a little salt and/or lime juice to the salsa before serving.

 

Giant Water Bug November 11, 2009

The other night around 10:30 at night DT was working on his truck outside and I was peacefully enjoying a glass of wine and catching up on some good TV.  When DT runs into the house screaming, Come see this!!  Then I heard skeeter barking and immediately thought he found a possum for something.

Turns out he spotted this huge Bug, at our back door.

Then he said run in and take a picture, but as you can tell I was not getting near this thing.

Just look at its front pinchers, all I could imagine was it flying on me and grabbing hold.  I would literally have a heart attack right there, I don’t like bugs.

Much less bugs that are about 2-3 inches long.  EEK!

So after some searching on the internets, I discovered this is a Giant Water Bug, aka Toe Biter,  double eek!

They live in water!  So what the hell was it doing on my back porch?   But DT and I being the softies we are decided that such an unusual creature should live, so he dropped him off in a neighboring pasture.  Hopefully he will make his way to some water.

Chocolate Pumpkin Oatmeal November 10, 2009

After spending so much time cooking, searching and obsessing over pumpkin recipes.  I finally found a super easy way to use up those pumpkin leftovers.  You know for all those recipes that call for just 1 cup from a 15 oz can of pumpkin.  This makes a yummy, healthy and filling breakfast.  It’s super fast to cook and is toddler approved.

Ingredients: 2 1/4 cups chocolate milk, 1 1/2 cups oatmeal, 1/4 tsp salt, 1/4 tsp cinnamon, 1/4 tsp vanilla, leftover pumpkin approximately 1/2 cup

Pour chocolate milk (reserving 1/4 cup) into a medium sauce pan, and heat over medium heat

Then add in the salt

oatmeal

and cinnamon, really you could add any other spices you like.  Allspice, cloves, or ginger would all be nice additions.

then cook over medium heat until oatmeal thickens.

Then stir in a vanilla

and pumpkin and stir well.

top off with a little reserved milk

and serve immediately

to your starving heathens

Chocolate Pumpkin Oatmeal

2 1/4 cups Chocolate Milk (reserve 1/4 cup for serving)

1 1/2 cup oatmeal

1/4 tsp salt

1/4 tsp cinnamon

1/4 tsp vanilla

1/2 cup pumpkin (leftovers from a 15 oz can)

Pour milk (reserve 1/4 cup of milk for serving) into sauce pan and heat over medium heat.  Add oatmeal, salt and cinnamon.  Cook until thickened.  Then stir in vanilla and pumpkin.  Then pour a couple of teaspoons of milk over each serving.

Menu Plan Monday November 9, 2009

My dad brought us a big bag full of lemons, oranges and grapefruits!! My mind immediately went to Grapefruit Cocktails!!!  Which is really the only way I like grapefruit, yum!!!  I am also recreating a favorite meal from one of my fav restaurants in Gruene, Texas called the Gristmill.  I can’t wait to eat it again.

I also found some really interesting squashes today at the grocery.  Tell me have you heard of a Turban, Delicata, or a Red Kuri squash???  Love any recipes.  I am going to have fun cooking with these.

So last week we had lots of yummy foods
